Ask most roasters what happens between 197 and 220 degrees Celsius, and you'll get an answer about flavor. Ask us, and you'll get an answer about chemistry too. Every coffee bean goes through a moment roasters call first crack, the audible signal that internal moisture is escaping and the bean's structure is changing. In our patent-pending process, that moment happens at 197 degrees Celsius. From there, heat is carefully raised to 220 degrees Celsius over a total roast time of roughly 19 minutes. Those numbers aren't arbitrary. They reflect a deliberate time-temperature profile designed to do two things at once: develop the flavor compounds that make coffee taste like coffee, and support the breakdown of pesticide residues that may still be present after washing and drying.

Pesticides don't all behave the same way under heat. Different compounds dissolve and degrade at different temperatures, and recent research indicates that controlled roasting conditions can reduce a meaningful share of pesticide remnants through thermal decomposition, without producing harmful by products like acrylamide in the process. This is one of the reasons Precision Roasting is paired with our zeolite based rinse rather than replacing it. Roasting addresses what heat can reach. The rinse addresses what heat can't.
